摘 要:为了充分利用红曲,对红曲的多种代谢产物进行了综述,着重介绍了红曲色素、抑菌性物质、降胆固醇和血糖血压类物质、预防冠心病物质、治疗骨质疏松类物质、酶类活性物质、其它代谢物质及真菌毒素等生理活性成分的性质和功能,同时展望了红曲研究的前景。In order to have a full utilization of monascus, a comprehensive introduction about the multi - metabolites of monascus was offered, among which, some are discussed in detail, such as monascus pigment, antibacterial substances,cholesterol- lowering, antidiabetics and blood pressure- lowering substances, coronary heart disease- preventing substances,osteoporosis -treating substances, enzyme active substances and other metabolites. The characteristics and function of some physiologically - active compounds, such as mycotoxins, were also discussed and the research prospect of monascus was put forward as well.
