摘  要:[目的]探讨将超声波应用于绿茶汁超滤澄清的效果。[方法]采用平板超滤装置澄清绿茶汁,选用CA材料2万、5万、10万分子量膜,系统研究了超声波处理对绿茶汁超滤膜通量、化学成分、儿茶素以及色差的影响。[结果]超声波处理能在一定程度上破坏绿茶汁中大分子聚合物,使更多有效物质从中分离释放出来,并能减少大分子物质在超滤膜上的附着几率,提高膜通量;能提高绿茶汁超滤膜通量和有效化学组成,对蛋白质、果胶等大分子物质和色差的影响较小,在达到一定的澄清效果下,提高绿茶汁的质量,同时提高超滤效率;5万分子量孔径的超滤膜比10万分子量孔径的澄清效果更好。[结论]超声波处理在保证绿茶汁澄清效果的同时,能提高有效成分的保存率和超滤的膜通量,提高超滤效率。[Objective]The study aimed to discuss the effects of application of ultrasonic in clarification by ultrafiltration of green tea juice. [Method]The green tea beverage was ultrafiltrated by using the Flat ultrafiltration device and three kinds of CA material with 20 000,50 000 and 100 000 molecular weight membrane were selected to systematically study the effects of ultrasonic treatments on the ultrafiltration membrane flux,chemical composition,catechin,as well as the color difference of the green tea juice. [Result]Ultrasonic treatment could destroy the macromolecular polymers to a certain extent in the green tea juice from which the more effective material could be separated and released out,and could reduce the attachment probability of the macromolecular material on the ultrafiltration membrane to increase the membrane flux. Ultrasonic treatment could improve the ultrafiltration membrane flux and effective chemical composition of the green tea juice,had little effect on the macromolecular material like the protein and pectin and color difference,and could improve the quality of green tea juice as well as the efficiency of ultra-filtration under the condition of reaching certain clarification effects of green tea juice. The ultrafiltration membrane with 50 000 molecular weight pore size could get better effect than that with 100000 molecular weight pore size. [Conclusion]Ultrasonic treatment could increase the retention rate of effective compounds and the membrane flux of ultrafiltration and improve the efficiency of ultrafiltration while assuring the clarification effects of green tea juice.
