摘　　要：介绍了微胶囊技术的国内外应用与研究现状,微胶囊的材料、功能和微胶囊化的方法。重点阐述了微胶囊技术在食品工业中的应用,并对其应用发展做了展望。Research and application at home and broad on food Microcapsul,the material,the funtion and the method of microencapsulation were reviewed.Focusing on the food microcapsul application in food industry and the prospect were described.
