摘  要:目的:了解食用菌类矿物质的营养价值。方法:用火焰原子吸收分光光度法(FAAS)测定了广东清远笔架山的20种食用菌的矿物质元素含量并用营养质量指数(Index of nutritional quality,INQ)法对其进行营养评价。结果:在所选取的20种食用菌样品中,K、Fe、Mn、Cu的营养质量指数INQ值均大于1;除大球盖菇外,Mg的营养质量指数INQ值大于1;除白背木耳外,Zn的营养质量指数INQ值大于1;有4种食用菌Ca的营养质量指数INQ值大于1。结论:被测的食用菌中,猴头菇等含钾较高而钠较低,是治疗缺钾性疾病的良药,也是高血压患者的食疗佳品;钙含量最高的黑木耳可视为人体补Ca的重要来源之一。大部分食用菌富含Fe;长裙竹荪和姬松茸富含Zn且两者的矿物质元素含量比较丰富。为食用菌的广泛开发提供了科学依据。To explore the nutritional value of mineral elements in twenty edible mushrooms.Method:The nutritional evaluation of mineral elements in twenty edible mushrooms determined by FAAS and it were evaluated by index of nutritional quality called"INQ".Result:The INQ values of K,Fe,Mn,Cu in twenty edible mushrooms were exceeded 1 respectively.The INQ values of Mg or Zn in nineteen edible mushrooms were exceeded 1 respectively.The INQ values of Ca in four edible mushrooms were exceeded 1 respectively.Conclusion:Hericium erinaceus was supposed to be a good source of k supplement.Auricularia auriculas was supposed to be one of the most significant sources of Ca supplement.Dictyophora indusiatas was supposed to be a good source of Fe supplement.Agaricus blazei Murrils could be regarded as a favourable choice of Zn supplement.The content of mineral elements in both Dictyophora indusiatas and Agaricus blazei Murrils was more than the content of other edible mushrooms.It was proved by the experimental results that a strong scientific warranty was obtained for the broader exploitation of edible mushrooms.
