摘　　要：Preparations Clean and rub the fish under running water to remove the scales. Cut off the head and tail. slit the abdomen and gut the fish. Carefully pry the rib cage and spine loose with your fingertips and a knife tip. Leave the fillets attached at the back so that the fish opens out into a pineapple shape.
