摘  要:目的:掌握泰州市食品污染状况。方法:2009年在全市范围内以随机购买的方式获得12类食品,181个样品,开展金属污染物、农药残留、食品添加剂等污染物监测。结果:监测结果显示,食品中重金属污染主要存在于蔬菜、猪肾、蔬菜中。面制品的铝污染严重,油炸食品合格率50.0%,馒头合格率25.0%。水果、茶叶中拟除虫菊酯类农药残留较高,检出率分别是40.0%和100.0%。6种人工合成色素检出率为0。防腐剂检出率100.0%,但未超标。酱菜、饮料中甜味剂含量高,合格率81.8%。食品中丙烯酰胺、氯丙醇、氨基甲酸乙酯、真菌毒素等的污染处于较低水平。结论:泰州市食品污染水平总体较低,但部分食品仍存在污染,应采取针对性措施,以提高食品安全性。Objective:To understand the status of market food contaminations in Taizhou.Methods:Analyze indexes such as metal contamination,pesticide remains,food additives etc in 12 types of food about 181 samples brought randomly in the city of Taizhou.Results:The monitoring result in 2009 showed that the pollution of heavy metal was mainly existed in vegetable,pig kidney,aquatic product.The aluminium contamination in wheat product was serious.The qualified rate of fried product was 50.0%,the steamed bun was only 50.0%.Pyrethroid were detected high in fruit and tea.The detected rate was 40.0% and 100.0%,respectively.The detection rate of 6 kinds of synthetic pigment was 0.The detection rate of preservative agent was 100.0%,and the content was within the standards.The content of edulcorant in pickles and beverage was high,with a qualified rate of 81.8%.The contamination in food such as arcylamide,chloropropanol,ethyl carbamate fungaltoxin was at low level.Conclusion:The overall level of contamination in market food in taizhou were low,but some food were still contaminated.Pertinent measures should be taken to reduce the contaminations ingesting.
