摘　　要：研究了 1 种溶剂对柑桔皮中的桔黄色素的提取率,选取最佳溶剂,根据正交试验选取提取该色素的最佳工艺条件,并将所得的桔黄色素产品进行了光和热及pH值的稳定性试验研究。Ten solvents were used to extract pigment from the tangerine peel.Based on the extract rates of pigments, the best solvent was determined.The optimum extraction conditions were detrmined by orthogonal experiments.The stability go lighr, heat and pH of orange pigment were tested.
