摘　　要：多数中小普洱茶厂在传统自然发酵过程中存在靠经验判断、卫生程度差、品质不稳定及劳动强度大等问题,用现代科学的分析检测方法探寻普洱茶发酵的规律,为普洱茶发酵过程的标准化、规范化、自动化提供示范。普洱茶发酵自动化设备由PLC主控设备、传感器(温湿度传感器)、变送器、计算机处理系统(人机界面显示)、智能化加温和加湿设备等构成,其特征在于将PLC控制及检测技术与普洱茶渥堆发酵工艺相结合,通过控制柜中的PLC连接普洱茶发酵现场的传感器,利用传感器检测发酵箱中普洱茶的温度湿度,通过信号线反馈到PLC控制系统上,对箱体内普洱茶发酵变化过程实时监控,采集数据传输给PLC主控设备和计算机处理系统,由计算机进行处理,实现普洱茶发酵的数字化控制;调整温度湿度达到普洱茶最佳发酵环境。The most small Pu＇er tea reprocessing factories judge in the traditional wild fermentation process depending on the experience,the hygienic degree is bad,quality unstable and labor intensity big and many questions with modern science＇s analysis examination method inquired about the Pu＇er tea ferments rule for Pu＇er tea fermentative process standardization,standardization,the automation provides the demonstration,Pu＇er tea fermentation automatic equipment,by the PLC master control equipment,the sensor（humiture sensor）,the transmitting instrument,the computer processing system（man-machine contact surface demonstration）,the intellectualized warming and adds constitutions and so on.Its characteristic lies in the PLC control and the examination technology and the Pu＇er tea moistens piles the fermentation process to unify,connects the Pu＇er tea fermentation scene through control cubicle＇s in PLC the sensor,using the sensor examination fermentation box in the Pu＇er tea＇s temperature humidity,feeds back through the holding wire to the PLC control system on,to the box in vivo Pu＇er tea fermentative change process real-time monitoring,gathers the data transmission for the PLC master control equipment and the computer processing system,carries on processing by the computer,realizes numerical control which the Pu＇er tea ferments;the adjustment temperature humidity achieves the Pu＇er tea best fermentation environment
