摘　　要：铁是人体必需的微量元素,铁缺乏是我国主要的营养问题之一。食物强化是一项最具有成本效益性的长期干预措施。文章列举了几种常见的铁营养强化剂及在食物中的应用,并就铁强化技术的研究进展进行综述,以期为食物强化进程中强化剂的选择提供参考。Iron is the indispensable element to the human body,but the iron deficiency in our country is one of the major nutrition problems.The iron-fortified food is considered to be the most effective measure to improve or maintain iron status in a target population.This paper introduced the current iron fortifiers,include the analysis of their properties and application,and reviewed the iron-fortified techniques,in order to offer an important reference for the choice of iron fortifiers in fortified food process.
