摘 要:通过单因素实验和正交实验,对葡萄皮多酚的浸提工艺进行了优化,确定最佳浸提条件为:浸提温度80℃、乙醇体积分数50%、浸提时间30 min、料液比1∶9(g∶mL)。在此条件下浸提2次,葡萄皮多酚浸提量达13.065 mg.g-1。对葡萄皮多酚的抗氧化活性进行了研究,当葡萄皮多酚提取液用量为2.5 mL时,羟基自由基的清除率约为55%。In this paper,the extraction process of polyphenol from grape peel was studied by single factor experiment and orthogonal experiment.The optimum extraction conditions were determined as follows:the extraction temperature 80℃,the volume fraction of ethanol 50%,the extraction time 30 min,the ratio of material to liquid 1∶9.Extracted under above conditions for two times,the extraction amount of polyphenol from grape peel reached 13.065 mg·g-1.The antioxidant activity of polyphenol abtained was explored.It was found that the cleavage rate of hydroxyl radicals was about 55% when the dosage of polyphenol extraction solution was 2.5 mL.
