摘　　要：近年来,红曲霉次级代谢产物实际应用价值越来越高。综述了不同环境因子对红曲霉产红曲色素、Monacolin K、桔霉素的影响情况及其功能和研究进展,并提出了研究方向。In recent years, practical application values of Monascus, secondary metabolites turn higher and higher. This paper summarizes the effects of different environmental factors on its produce of secondary metabolites, monascus pigment, Monacolin K and orange amphotericin, as well as their function and research development, then introduces some further research directions.
