红景天复合饮料抗氧化成分及抗氧化活性研究

摘　　要：研究了以红景天等材料配制饮料的抗氧化功效成分及抗氧化的活性。试验测定了该饮料及配方原料的黄酮含量、DPPH自由基清除率和总还原力,同时也测定了饮料对脂质过氧化消除能力。结果表明,该饮料中含有抗氧化黄酮成分,浓缩液中总黄酮含量为3.13 mg/100 mL,还原力相当于VC(83.29μg/mL),DPPH自由基清除率达49%,显示该产品具有的抗氧化功效可起到消除运动疲劳的作用,并具有良好的抗氧化活性。This paper studies the antioxidant compounds and antioxidant activity of anti-fatigue sport drink prepared with Rhodiola and other edible and medicinal vegetable herbs. The total flavonoid content of each herb extinct as well as the prepared drink are evaluated. For antioxidant activity, the DPPH radical scavenging activity, reducing power and lipid peroxidation of the extracts are evaluated. The results indicate that the sport drink has high level of antioxidant compounds and activity. The total flavonoid is 3.13 mg/100 g, the reducing activity is 83.29 tx g/mL and the DPPH scavenging activity is 49% in the concentrated liquid, separately. The results indicate the antioxidant drink may play the effect of dissipating sport fatigue.
