栉孔扇贝性腺基本营养成分分析

摘　　要：摘要对栉孔扇贝性腺内的水分、灰分、矿物质、蛋白质、脂肪和多糖含量进行了测定,并对氨基酸以及脂肪酸和甾醇类的组成进行了分析。结果表明,采用直接干燥法测定性腺水分含量为雌性86.87%、雄性85.48%;采用灼烧称量法测定灰分含量为雌性5.85%、雄性6.82%;ICP-AES法测定了几种主要矿物质的含量以及凯氏定氮测定性腺干基的蛋白质含量;氯仿-甲醇法测定脂肪含量为雌性20.05%、雄性15.41%;苯酚-硫酸法测定多糖含量,雌性为4.0%、雄性为2.9%;用氨基酸自动测定仪测得了17种氨基酸的含量,8种人类必需氨基酸除色氨酸没有测定外,其他7种氨基酸含量均较高;用GC-MS法分析的不饱和脂肪酸EPA和DHA含量较高、甾醇的种类较少。Basic nutrient components of chlamys farreri were investigated in this paper.Moisture content,ash content,mineral substance,protein,fat and polysaccharide content were assayed and amino acids and the composition of fatty acids and sterols were also analyzed.The results showned that:Moisture content of the female gonad was 86.87%,and male was 85.48%;ash content of 5.85%for the females, males 6.82%;Using ICP-AES assayed several major mineral content and by Kjeldahlmethod female and male gonadal protein content on dry basis were 70.76%and 78.16%;by Chloroform methanol method,female and male gonadal fat content were 20.05%and 15.41%by phenol-sulfuric acid method, female and male gonadal polysaccharide content were 4.0%and 2.9%,and so on.
