Comparison of the Recovery of Water Soluble Proteins from Washings of Hypophthalmichthys molitrix Surimi by Two Flocculants

摘  要:研究褐藻胶和三氯化铁对白鲢鱼糜漂洗液中水溶性蛋白的絮凝功能,并比较它们的絮凝效果。鱼糜漂洗液含水溶性蛋白6.14 g/L,使用褐藻胶,其蛋白回收率可达到70%以上,而三氯化铁只能达到40%。采用响应面法(RSM),选择絮凝功能相对较好的褐藻胶进一步再做两因素组合试验,得到最佳工艺条件为每250 mL漂洗液需添加浓度为1.0%的褐藻胶10 mL。经测定,絮凝物(干基)含蛋白61.39%,脂肪2.90%,灰分21.58%。通过对鱼糜漂洗液中水溶性蛋白的回收,不仅可以降低环境污染,而且有助于推进废弃蛋白资源的综合利用。The flocculation functions of Sodium Alginate(SA) and Ferric Chloride(FeCl3) on water soluble proteins from washings of Hypophthalmichthys molitrix surimi was compared in this study.The surimi washings contained 6.14 g water soluble proteins per 1 000 mL.When SA was used,the protein recovery rate could reach over 70 %,but only 40 % by FeCl3.Therefore,SA was chosen as an optimal flocculant to do further composite testing by using a response surface methodology(RSM).The optimal process condition is adding 10 mL,1.0 % SA per 250 mL washings.The proximate composition of flocculates was 61.39 % protein,2.90 % fats and 21.58 % ash on dry basis.The recovery of water soluble proteins from Surimi washings will not only reduce environment pollution but also help to boost the comprehensive utilization on Ferric Chloride waste protein resources.
