固体酵母通风制曲生产工艺总结

摘　　要：通过二次加水,将酵母及Q303根霉三级种溶入其中,再加入抑菌剂,通过喷雾器把酵母及根霉分散到麸皮载体上进行通风培制固体酵母工艺生产固体酵母曲。对固体通风酵母曲制曲工艺进行了总结。Yeast and three-generated species of Q303 Rhizopus were dissolved through secondary watering,then bacteriostatic agents were added,and the solution was sprayed evenly on wheat bran by sprayer for the production of solid yeast starter by ventilated culture.In this paper,the related production techniques were summarized.
