摘 要:食品安全问题,关乎人民的身体健康,而标准是衡量食品安全的重要依据。文章反映了近年来因相关海藻卫生安全标准存在的问题,人为造成海藻重金属超标的现象,给生产企业造成极大的困扰。文章通过分析海藻富集水中重金属并进行形态转化的特性人手,阐述了现行海藻卫生安全相关标准存在的问题,从而揭示海藻重金属检测超标的本质;并提出加强对标准的适用性进行分析,建立中国食品质量安全风险分析制度。The issue of food safety is very significant to peoples'health, while standards are the basic measurements of food safety. This paper illustrates some problems related to algae health and safety standards recently, which brought great harassments to manufactures, owing to the matter of heavy metals over-standard artificially. Based on analyzing the characteristics of algae enriching heavy metals around water and transforming them, we elaborate some current issues existing in algae health and safety standards to reveal the essence of heavy metals detected over-standard in algae. And then, the strategy of the applicabihty analysis of standards and suggestions on establishing the system of food health and quality risk analysis are proposed.
