中国的特种稻米

摘　　要：中国的特种稻米包括黑、紫、红等有色稻米和白色香米, 其原始品种主要分布在我国西南高原山区, 一般产量较低, 经创新与改良后的特种稻米, 保留了原品种的特色, 降低了植株高度, 提高了抗病性, 产量水平已达到5.25～7.5 t·hm - 2。品质分析结果表明: 特种稻米除了具有普通稻米的营养成分外, 部分品种富含矿物微量元素, 尤其富含铁 (Fe) 和硒(Se)。经医学临床试验, 对儿童缺铁性贫血、糖尿病患者及产妇有显著疗效和滋补作用。近年来特种稻米种植面积在逐步扩大, 白色细长粒香米已上市场, 用以替代进口的泰国香米, 有色米亦已被用做糕点等原料,Special rice(rice used for special purpose)in China includes colored grains with different pigment content in pericarp such as black,purple and red colors and scented rice without pigment.The local varieties of special rice mainly originated in the Southwest mountain area of China and usually have low yielding ability.However,some improved new lines of special rice have a yielding level of 5 25～7 5 t/hm 2 with their pericarp color remained.Grain quality analysis showed that some special rice contains not only nutrient component in common rice,but also kinds of mineral trace element,especially iron and selenium.Such elements have notable curative and nutrition effect on asiderotic anemia childern,diabetic and puerpera.In recent years,the growing area of special rice is being enlarged.The scented rice with long grain shape and non pigment has been on the market to replace that import from Thailand.Colored rice has been used as raw material in making cake.Black and purple pericarp can be drawn out natural pigment as food additives.
