摘  要:对人工养殖的克氏原螯虾、罗氏沼虾、日本沼虾和南美白对虾的肌肉营养成分检测表明,克氏原螯虾的水分和粗灰分最高,罗氏沼虾的总糖和磷的含量较高,日本沼虾的粗脂肪、钙、铁、铜、铅含量较高,南美白对虾的含肉率、粗蛋白含量最高。4种虾均富含单不饱和脂肪酸和多不饱和脂肪酸,其中油酸(十八烯酸)含量最高;从EPA+DHA的含量来看,南美白对虾最高,罗氏沼虾最低;4种虾(n-6)/(n-3)比值均超过了膳食营养素参考摄入量范围,但克氏原螯虾的值与参考值最接近;多不饱和脂肪酸与饱和脂肪酸的比例以克氏原螯虾最大,日本沼虾次之,罗氏沼虾最小。Experiments were carried out to evaluate the muscle nutritional composition of Procambarus clarkii,Macrobrachium rosenbergii,Macrobrachium nipponense and Litopenaeus vannamei,the results showed that the moisture and crude ash of Procambarus clark were the highest,the total sugar and phosphorus content of Macrobrachium rosenbergii were higher,the crude fat,calcium,iron,copper and lead of Macrobrachium nipponense were higher,the flesh content and crude protein of Litopenaeus vannamei were the highest.To fatty acids,the four kinds of shrimp were rich in monounsaturated fatty acids and polyunsaturated fatty acids,oleic acid(18 dilute acid) was the highest;from the view of EPA+DHA,the contents of Litopenaeus vannamei were the highest,and the contents of Macrobrachium rosenbergii were the lowest;the ratio of n-6/n-3 of four kinds of shrimp were all over Chinese DRIs,but Procambarus clark was the closest to the reference value;P/S value of Procambarus clark was the biggest,followed by Macrobrachium nipponense,the value of Macrobrachium rosenbergii was the smallest.
