摘  要:目的测定广东居民常见的早餐食物的血糖生成指数(GI)值。方法根据待测食物的碳水化合物含量计算含有50g碳水化合物的待测食物量;用50g葡萄糖作为对照物。以8~10个志愿者为1个测试组,分别在空腹状态下进食葡萄糖和待测早餐食物,并测定餐后2h内不同时点的血糖水平。根据Wolever方法计算待测食物的GI值。结果测定了14种广东居民常见早餐食物的GI值,有7种食物属于高GI食物,有2种食物属于中GI食物,有5种食物属于低GI食物。结论糖尿病患者在食物选择时应避免高GI食物,选择中GI或低GI食物。Objective To establish the relationship between the types of breakfast foods and the glycemic index(GI) in Guangdong residents.Methods Breakfast foods with a fixed amount of carbohydrate content(50 gram) were used in the calculation of GI.Results were compared with the GI derived from the consumption of 50 gram of glucose.Groups of 8~10 volunteers with empty stomach were treated with glucose or the breakfast foods.Blood glucose levels were monitored within the first 2 hours and the GI value was calculated using the Wolever method.Results Fourteen types of breakfast foods were tested and the GI values were calculated.Seven types of breakfast foods had a high value of GI.Two types of breakfast foods had a medium value of GI,and 5 types of food belong to low GI foods.Conclusion Diabetes patients should select medium to low GI foods.
