菠萝皮渣营养成分及矿质元素检测分析

摘　　要：对菠萝皮渣中的营养成分及K、P、Mg、Ca、Mn、Fe、Zn、Na、Al、Cu、Ni、Co等矿质元素的含量进行了分析,结果表明:菠萝皮渣中含有丰富的矿质元素、总糖、粗纤维等多种营养成分。菠萝皮渣中不但含有人体所需的P、K、Ca、Mg、Na等常量元素,而且还含有Cu、Zn、Fe、Ni、Mn、Co等人体必需的微量元素。K元素含量最高,P、Mg次之,为进一步研究菠萝皮渣的利用价值提供了依据。The nutritional components and mineral elements K,P,Mg,Ca,Mn,Fe,Zn,Na,Al,Cu,Ni,Co of pineapple peel and pomace had been analyzed.The results showed that they contained rich nutritional components such as mineral element,diet fiber and total polysaccharides.It was found that K element had the hightest content in whole elements in the pineapple waste,the content of P and Mg were just less than K,which provided theoretical basis for the further investigation of utilization value of the Pineapple peel and pomace.
