摘　　要：文章分析了国内芽菜生产的总体现状以及芽菜发酵微生态状况,芽菜的生产工艺,芽菜产品的营养及芽菜食品安全问题,提出了改进芽菜生产工艺、过程控制,提高产品的质量。In this paper,the general present situation of the domestic production of the bean sprouts were studied.And the state of the microbial vaccine fermentation was analysed,and the bean sprout production technology,nutrition and bean sprouts security research were also refered.In my topic,the advice about how to dominate the production process and control the technology and ensure the quality were raised.
