摘　　要：为了建立宠物食品中沙门氏菌的辐照模型,研究了用60Coγ射线辐照不同理化性质的宠物食品,考核理化性质对沙门氏菌灭菌效果的影响。考察了初始菌数量、pH值、含水量、蛋白质含量、辐照后储存时间等因素对沙门氏菌杀灭效果的影响,得到了宠物食品中沙门氏菌的辐照模型。模型的建立为宠物食品中沙门氏菌的灭菌提供了新的方法,为其他类型菌株的辐照灭菌提供参考,在生产上具有一定的指导意义。This paper reported decontaminative effect of irradiation on Salmonella sp. in the different pet foods in order to establish irradiation model. The physiochemical properties of pet food was assessed to sterilization effect of Salmonella sp. After analysis of effects of the initial flora amount, pH value, moisture contents, protein contents and storage time after irradiation on efficacy of sterilization of Salmonella sp., a pet food irradiation mathe-matical model was set up. A new method for sterilization of Salmonella sp. in pet food was provided. The results provided a reference for other types of strains irradiation sterilization as well and it had certain directive significance in production.
