摘 要:目的了解2010年玉林市食品中食源性致病菌污染状况,确定可能污染致病高危食品,为食品安全监管提供科学依据。方法按照GB4789.3.4.10.30.40-2010、GB/T4789.7.9.36-2008以及《2010年广西食品安全风险监测工作手册》对致病菌分离鉴定以及大肠菌群MPN法计数。结果检测13个品种的食品共104份,其中23份食品检出致病菌,检出率为22.1%。13个品种食品中致病菌检出率前5位分别为鲜冻水产品(63.6%)、生禽肉(50.0%)、婴幼儿配方食品(42.9%)、生畜肉(37.5%)和生食水产品(18.2%)。直接入口食品大肠菌群检测共40份,阳性33份,阳性率为82.5%。结论直接入口食品致病菌污染率高,食品安全执法部门应重点监督,减少食源性疾病的发生。Aim To understand the contamination condition of food-borne pathogenic bacteria in food products supplied in Yulin City. Methods Based on GB4789.3.4.10.30.40-2010,GB4789.7.9.36-2008 and manual for monitoring food safety risk The 1bodborne pathogenic bacteria were isolated and identified ,and the coliform MPN counting were performed. Results Totally 104 food samples were collected from 13 kinds of food products and pathogenic bacteria were identified in 23 samples with a positive rate of 22.1%. The positive rate of frozen aquatic products was the highest (63.6%, followed by raw poultry meat (50.0% ,baby formula foods (42.9% ,raw livestock meat (37.5%),fresh aquatic products (18.2%) ,salad(1.7%) ,pickled vegetable and fresh juic(14.3%) ,nn-fermented pea product (12.5%) ,cooked meat (8.33%) There 33 ready food were positive for Escherichia eeoli with a positive rate of 82.5% (33/40). Conclusion Effective measures be taken to inspect the hygienic conditions of the food and protect the health of the residents.
