摘 要:目的了解海阳市市区及乡镇街头食品摊点餐具的卫生状况,为食品卫生监督管理提供科学依据。方法使用大肠菌群检测纸片检测。结果 2006—2010年食品摊点合格率为58.59%,合格率逐年上升,市区合格率(65.08%)高于乡镇(48.57%);餐饮具消毒合格率61.08%,市区(67.16%)高于乡镇(50.83%);杯、匙、筷的合格率高于碗和盘;消毒(98.46%)与未消毒(21.86%)餐饮具的卫生合格率差异有统计学意义,采样的餐饮具有48.8%的未经消毒。结论海阳市食品摊点餐饮具卫生合格率较低,应结合实际,加强督导和监测管理,保障群众的饮食安全。[Objective]To understand the sanitary situation of tableware in street foods stalls in Haiyang City,and provide scientific basis for food hygiene management.[Methods]Conliform test paper was used for test.[Results]The hygienic qualification rate of food stalls was 58.59% during 2006-2010,and it increased annually.The urban hygienic qualification rate(65.08%)was higher than that of villages and towns(48.57%);The hygienic qualification rate of tableware was 61.08%,urban rate(67.16%) was higher than rural rate(50.83%);The hygienic qualification rate of chopsticks,spoon,cup was higher than that of bowl and plate.The qualification rate of disinfectant tableware(98.46%) was different from that of unsterile tableware(21.86%).48.8% percent of all sampling tablewares were not sterilized.[Conclusion]The hygienic qualification rate of tableware is relatively low in Haiyang City.It needs to integrate with reality,to strengthen the supervision and monitoring,so as to ensure the food safety of residents.
