摘  要:目的了解北京市密云县2007—2010年食品化学污染物污染状况。方法按计划采集密云县辖区内蔬菜、食用菌、水产品、乳制品、肉类、粮食、藻类、蛋类、干红葡萄酒、蜜饯、馒头、散装熟肉制品等样本,按照GB/5009-2003等国家标准方法检测铅、镉、汞、铝、甜味剂、防腐剂、合成色素、着色剂等理化指标。结果共采集样本475份,获得有效监测数据1 712项。食品污染物铅、汞、苯甲酸、山梨酸、亚硝酸盐、合成色素、糖精钠、过氧化苯甲酰的超标率均为零,二氧化硫超标率为1.37%(1/79),甜蜜素超标率2.17%(1/46),镉超标率为7.60%(26/342)。结论密云县食品整体上化学性污染水平较低,应继续加强食品安全风险监测常规工作。[Objective]To learn the pollution condition of food chemical pollutants in Minyun county of Beijing from 2007 to 2010.[Methods]The samples of vegetable,edible fungi,aquatic products,dairy products,meats,grain,algae,eggs,dry red wine,glace fruit,steamed bread and bulk cooked meat were collected from Minyun county.The contents of lead,cadmium,mercury,aluminum,sweetener,preservative,synthetic pigments and colorant were tested according to national standard methods of GB/5009-2003.[Results]A total of 475 samples are collected,and 1712 items of valid data were obtained.The over standard rate of food pollutants which included lead,mercury,Benzoic acid,sorbic acid,nitrite,synthetic pigments,sodium saccharin and benzoyl peroxide was 0.The over standard rate of sulfur dioxide,sodium cyclamate and cadmium was 1.37%(1/79),2.17%(1/46) and 7.60%(26/342) respectively.[Conclusion]The chemical pollution in food is relatively low in Minyun county,and the routine monitoring of food safety should be strengthened continuously.
