超浓缩复合己酸菌液在湘窖酒业窖泥培养中的应用

摘　　要：采用超浓缩复合己酸菌液和自培功能菌与老窖泥混合培养制作老窖泥培养液,用于人工老熟窖泥的培制,以对现有窖池进行重建和改造,并对使用效果进行分析总结。结果表明,各项结果均接近或超过原有老窖池水平,据此确定湘窖酒业二期浓香型白酒人工老熟窖泥生产工艺。Hypereoneentmted compound caproic acid bacteria liquid, coupled with self-cultured functional bacteria and aged pit mud, was used to produce culture liquid for aged pit mud. Such culture liquid was then used for the innovation and the reconstruction of the existing pits in Xiangjiao Liquor Industry Co.Ltd. and the use effects were investigated. The results suggested that each index of the reconstructed pits was close to or exceeded the level of previous pits. Accordingly, the production technology of manmade aged pit mud in Xiangiiao Liquor Industry Co.Ltd. was finally determined.
