摘 要:采用高效液相色谱-质谱联用(LC-MS/MS)同位素内标法,测定了欧李果原汁中游离氨基酸。结果表明,欧李果原汁中共检测出28种游离氨基酸,总含量为1640.1mg/L;人体必需8种氨基酸含量为86.8mg/L,婴幼儿必须氨基酸含量为16.2mg/L;支链氨基酸含量为34.6mg/L;脯氨酸含量为832.1mg/L;天门冬酰胺含量为300.5mg/L;γ-氨基丁酸含量为169.7mg/L。总结了脯氨酸、天门冬酰胺、γ-氨基丁酸营养价值,分析了其积累的原因。Free amino acids in Chinese dwarf cherry juice was determined with isotope internal standard method by high performance liquid chromatography-mass spectrometry(LC-MS/MS).The main results show of the study were as follow.The Chinese dwarf cherry juice contains 28 free amino acids,the total content of its was 164.01 mg/100 mL;The one of 8 kinds of essential amino acids was 8.68 mg/100 mL;The content of amino acid for infant was 1.62 mg/100 mL;The one of branched-chain amino acid was 3.46 mg/100 mL,The one of proline content was 83.21 mg/100 mL;The one of asparagines was 30.05 mg/100 mL;The one of γ-amino butyric acid was 16.97 mg/100 mL.The nutritional value of proline,asparagines and γ-amino butyric acid were summarized,and the accumulation reasons for its were analyzed.
