摘  要:米香型白酒贮存老熟的质量与贮存容器有着密切的关系,贮存容器种类很多,常用的贮酒容器有陶坛、不锈钢、木箱等,不同的贮存容器贮酒对酒在老熟期的酒质的影响差异很大。陶坛贮酒,对米香型白酒的催陈较好。本公司所产米香型白酒的贮存秉承分级分质的原则,选择陶瓷贮酒容器,起到催陈的作用,后期及成品酒的贮存则用不锈钢罐贮酒。The selection of liquor vessel was closely related to the wine quality during aging period. There were many different kinds of liquor vessels in wine production, including ceramic vessels, stainless steel tanks, wooden vessels, etc. These different kinds of vessels were closely related to the taste of wine. Ceramic vessel played an important role in the process of accelerating aging of spirituous liquor. Depending on principles of grading along with quality, ceramic vessel was selected for storing during the process of accelerating ageing of liquor, and stainless steel tankl was used in the latter period.
