摘  要:[目的]探讨研制茶多糖口服液的最佳配方并研究其体外抗氧化活性。[方法]以常熟"沙家浜"粗老茶叶为原料,提取并纯化得到茶多糖。以茶多糖为主要成分,白砂糖、蜂蜜、柠檬酸为配料,优化茶多糖口服液的配方,并通过研究茶多糖口服液对羟自由基和超氧阴离子自由基的清除作用,探讨其抗氧化活性。[结果]茶多糖口服液的最佳配方为茶多糖的添加量0.3%,白砂糖4.0%,蜂蜜3.0%,柠檬酸0.1%。茶多糖口服液对羟自由基和超氧自由基均有一定的清除作用,对超氧自由基的清除能力强于对羟自由基。[结论]制得的茶多糖口服液酸甜适中,有浓郁的绿茶香气,口感清爽,并具有较强的体外抗氧化活性。[Objective] The aim was to explore the optimal way of magistral formula and its anti-oxidation activity in vitro of tea polysaccharide oral liquid.[Method] The crude tea leaves named Changshu "Sha Jia Bang" were used as raw material,polysaccharides were extracted and purified from tea.Tea polysaccharides were used as the main component.Sugar,honey,citric acid were used as ingredients to study the magistral formula of tea polysaccharide oral liquid.Scavenging effects of hydroxyl radicals and superoxide radical of tea polysaccharide oral liquid were investigated to study its anti-oxidation activity.[Result] The best magistral formula of tea polysaccharide oral liquid formula was determined as follows: 0.3%tea polysaccharide,4.0% sugar,3.0% honey and 0.1% citric acid.Tea polysaccharide oral liquid had scavenging effects of hydroxyl radicals and superoxide radical.The super oxygen free radical scavenging of tea polysaccharide oral liquid was stronger than hydroxyl radical.[Conclusion] The tea polysaccharide oral liquid tasted moderate sweet and sour with green tea aroma and tasted fresh with stronger anti-oxidation activity in vitro.
