6种豆类提取物的抗突变作用

摘  要:Ames试验结果表明,黄豆等6种豆类的丙酮提取液对致癌或致突变剂AFB_1,杂色曲霉和棕曲霉代谢提取物诱导TA98移码型、TA100硷基置换型突变株回复突变有不同程度的抑制作用,提示这些豆类可能有预防肝癌作用。但尚需进一步研究以便为开发食品防癌资源的研究提供科学依据。The antimutagenicity of six bean acetone extracts was investigated by Ames test(TA98 and TA100 mutant).The mutagens choosen were AFB_1 and the metabolic extracts of A.ochrace and A.Uersecolor which were the pollution moulds in the main foods in the high liver cancer incidence area.The revertants induced by these three mutagens were singnificantly decreased with a dose-effect relationship when each of the six bean extracts was separately added into the medium.The results suggested that these beans had different degrees of antimutagenic effect on the above mutagens.These six beans may be of practical value in the prevention of cancer,especially liver cancer.Specially in liver cancer.
