摘　　要：综述了胶原蛋白的基本特性,与健康之间的关系,以及在乳制品中的最新应用进展。Collagen is the main component of extra-cellular matrix, It is very important on aging, calcium supplement, blood fat dropping, arteriosclerosis and high blood pressure prevention. The basic property of collagen, the relationship between health and collagen, and the latest applications in dairy industry are reviewed.
