摘 要:食品分析实验是食品科学与工程专业重要的专业实践课程之一,为了激发学生的学习兴趣、培养学生的创新精神、提高学生综合实践能力、改善教学效果,本文对食品分析实验课程的教学进行了一些有效的改革与探索,包括:优化和增加了实验教学内容,将实验分为基础实验、验证实验、综合设计实验和创新实验四个层次;改善了教学方法和手段,如强化了课前预习,应用多媒体现代化教学手段,同时增设了开放性实验;改革了考核方式,将实验课前预习、实验实施过程中的表现和实验课后总结进行综合考核。Food Analysis Experiment was one of the professional practice courses of food science and engi- neering specialty. In order to spirite students" studying interest, cultivate students" innovation ability, promote students" comprehensively practical talent, and improve teaching effect, this paper demonstrated the teaching reformation and exploration on the course of food analysis experiments. The teaching content was optimized to four levels including the foundational experiment, the verified experiment, the synthetic design experiment and the innovation test. Teaching method was improved by enhancing preparation before class, applying multimedia and increasing open experiments. Examination mode was replaced with a comprehensive examination composed of preparation, performance and summary after class.
