摘  要:为了研究高产蛋鸡和地方品种鸡在全蛋与蛋黄中营养物质相对含量和绝对含量的差异及其原因,选用罗曼粉壳蛋鸡和北京油鸡为试验材料,在相同的饲养条件下进行饲养,43周龄时,连续收集10 d的鸡蛋并进行蛋品质测定。结果显示:除粗蛋白外,主要的营养化学物质存在于蛋黄中;营养化学物质在蛋黄中的差异要小于在全蛋中的差异,并且这种差异主要是由于干物质含量以及蛋黄比例的差异所引起的。只有在卵磷脂这一营养化学指标上,不管是在全蛋还是在蛋黄中,不管是相对含量还是绝对含量上,北京油鸡都要极显著地高于罗曼粉壳蛋鸡,这可能与品种有关。In order to study the difference on nutrient content between whole egg and egg yolk of high-yielding commerical laying hen and indigenous chicken, Lohmann pink laying hens and Beijing fatty chicken were used. All chickens were fed with the same diet and eggs were continuously collected for 10 days from 43 weeks age. The re- sults showed that in addition to crude protein, the main nutrient contents presented in egg yolk ;the differentee of nutri- tional chemical substances in egg yolk was less than that in whole egg,which were mainly caused by yolk dry matter content and the proportion of egg yolk; only the lecithin from Beijing fatty chicken was significantly higher than Lohmann pink laying hens, whether in whole egg or egg yolk, whether relative or absolute amount, which may be mainly caused by chicken breed.
