摘  要:利用水、氯化钠、乙醇、氢氧化钠,分别提取玉米胚芽中的水溶蛋白、盐溶蛋白、醇溶蛋白、碱溶蛋白,确定各种分离蛋白的最佳溶剂条件。样品过80目筛后,脱脂处理,取5 g脱脂样品进行试验。结果表明,水溶蛋白的最佳溶剂量为水80 mL,提取率为37.13%;盐溶蛋白的最佳溶剂浓度为质量分数为6%的氯化钠溶液,提取率为25.34%;醇溶蛋白的最佳溶剂浓度为质量分数为70%的乙醇溶液,提取率为3.8%;碱溶蛋白的最佳溶剂浓度为质量分数为0.3%的氢氧化钠溶液,提取率为40.18%。此外对蛋白的氨基酸组分进行了分析。This paper aims to find out the best solvent conditions for extracting protein by sequentially separating the water-soluble,salt-soluble,prolamin-soluble and alkali-soluble protein in corn germ,using water,NaCl,ethanol and NaOH as solution.Take 5 g sample from defatted corn germ of 80 mesh to do the research.And the result showed that the optimal amount of water for extracting water-soluble protein was 80 mL,with the extraction rate of 37.13%,the optimal concentration of NaCl for extracting salt-soluble protein was 6% with the extraction rate of 25.34%,the optimal concentration of ethanol for extracting prolaminsoluble protein was 70% with the extraction rate of 3.8% and the optimal concentration of NaOH for extracting alkali-soluble protein was 0.3% while the extraction rate was 40.18%.In addition,the amino acid compositions of extracting protein and their analysis.
