摘 要:为给顶坛花椒储藏品质及综合开发提供参考,对不同采摘时间和海拔高度的顶坛花椒籽的质量及花椒籽储藏期间的生理代谢和油脂品质进行分析。结果表明:低海拔地区成熟花椒籽品质优于高海拔地区的;常规晾晒加工的花椒籽在储藏期生理代谢旺盛,不耐储藏;充氮气调、生物降氧、真空条件均对花椒籽脂肪降解有抑制作用,新采摘花椒籽采用人工降低水分和自然缺氧气调的储藏方式为宜。To provide a reference for storage quality and comprehensive development of Zanthoxylum planispinum var.dintanensitys,based on the comparison of the characteristics of Zanthoxylum planispinum var.dintanensitys seeds picked in different time and altitude,the change of physiological metabolism and oil-fat quality in Zanthoxylum planispinum var.dintanensitys seeds were tracked and analyzed emphatically during storage time.The results showed that the qualities of mature seeds at low altitudes were better than that at high altitudes.The seeds that kept a higher physiological activity by regular air-drying were unfit for storage.Reduced oxygen by filling nitrogen,biological method and vacuum extraction restrained the fat decomposition in the seeds.It suggested that fresh picked-seeds should be stored in a natural hypoxia-environment with low moisture.
