摘  要:研究纤维素酶降解壳聚糖生产壳寡糖的工艺条件,对影响壳聚糖降解的因素进行探讨,通过正交试验优化酶解反应工艺参数。结果表明:影响壳聚糖降解的主次顺序分别为反应时间>纤维素酶和壳聚糖比例>温度>pH值;最佳酶解条件为温度40℃,纤维素酶∶壳聚糖=1∶6,pH值5.0,反应时间8h。壳寡糖的得率为96.5%。The production process of chito-oligosaccharide by cellulose enzyme degradation were researched. The influence racquet's ,of chito-oligosaccharide degradation were discussed. And the cellulose enzyme reaction process parameter was optimized tt,rough orthogonal experiment in this paper. The results showed that the sequence of influencing chito-oligosaceharide degradation was the reaction time〉 cellulose enzyme and chito-oligosaccharide proportion〉temperature〉pH. The best zymolysing conditions were temperature 40℃,cellulose enzyme: chito-oligosaccharide for 6, pH 5, reaction time 8 h. The chito-oligosaccharide output was 96.5% under the condition of optimization degradation conditions.
