摘 要:以野生欧李为试材,研究欧李果实发育过程中果肉中不同形态钙和不同溶解性果胶的含量动态变化及其相互关系,为研究欧李果实钙素吸收机制提供理论依据。结果表明:欧李果肉中果胶酸钙、磷酸钙、草酸钙和剩余钙形态含量变化均呈先增长后下降趋势,且均以花后45d含量最高,水溶性钙形态含量呈先下降后增长趋势,花后90d含量迅速增长,花后15~75d以果胶酸钙形态含量最高,占果肉总钙量的40.69%~57.11%,果实成熟期以水溶性钙形态含量最高;果肉中水溶性果胶、盐溶性果胶和碱溶性果胶含量变化均呈先增长后下降趋势,其含量最高值花后天数有所差异,果肉中以碱溶性果胶含量最高,占果肉总果胶量的72.63%~89.61%,其次为水溶性果胶;相关分析结果表明,果肉中果胶酸钙与碱溶性果胶呈显著正相关关系。欧李果实发育中碱溶性果胶成分的代谢是影响果实钙素吸收与积累的重要因子。In order to explore the mechanism of calcium adsorption,the content variation and the correlation of different forms of calcium and different soluble pectin in Chinese dwarf cherry(Cerasus humilis) flesh were analyzed.The results showed that the contents of calcium pectate,phosphate calcium,calcium oxalate and other forms of calcium increased first and then decreased,whose peak value appeared 45 days after flowering.The water-soluble calcium content had the reverse tendency by increasing rapidly 90 days after flowering.The peak value of calcium pectate appeared 15-75 days after flowering,which accounted for 40.69-57.11 percent of total calcium.The water-soluble calcium was the main form during the fruit maturity period.The contents of water-soluble pectin,salt-soluble pectin and alkali-soluble pectin increased first and then decreased,but their peak value appeared at different days after flowering.The content of alkali-soluble pectin was maximum during fruit development,which accounted for 72.63~89.61 percents of total pectin content,and the water-soluble pectin was in the next place.The result of co-relationship analysis showed that calcium pectate was notable positively correlated with alkali-soluble pectin.It was proposed that the metabolism of alkali-soluble pectin was the important factor which influenced calcium adsorption and accumulatiom during Cerasus humilis fruit development.
