摘 要:目的了解江阴市生产加工的熟食卤菜卫生质量,预防食源性疾病的发生。方法对熟食卤菜店及餐饮服务单位各20家、5家超市制售的熟食卤菜进行卫生监测。结果我市制售的熟食卤菜总合格率为52.49%,2010年合格率最低,为29.49%。其卫生质量,一、四季度好于二、三季度,市区好于乡镇,餐饮服务单位好于熟食卤菜店,酱卤肉类好于凉拌菜类。结论我市熟食卤菜的加工、销售存在严重的食品安全隐患,必须进一步对熟食卤菜行业加强管理,完善卫生设施,同时加强对卤菜行业从业人员的卫生知识培训。Objective In order to understand the hygienic quality of delicatessens which production in Jiangyin city,and prevention and control the food born diseases.Method Carrying out hygienic quality monitoring to the food of 20 delicatessens,20 repast service units and 5 supermarkets.Results The total qualified rate was 52.49%,2010 was 29.49% and it was the lowest.The health quality of the first and fourth quarters were better than the second and third quarters,towns were better than villages,repast service units were better than delicatessens,the meat products cooked in soy sauce was better than salad.Conclusions There were serious food safety problems in food processing and sales in our city,we need to further strengthen the management,improve health facilities,and strengthen health information training to staffs.
