摘  要:目的了解北京市大兴区餐饮业卫生及餐具消毒状况,为加强监管提供依据。方法 2010年1—7月按照随机抽样的原则,选取部分中小型餐饮业、企业食堂各100户作为调查对象,采集餐具样品进行检测,按照《食(饮)具消毒卫生标准》(GB 14934-94)对结果进行分析。结果餐饮单位均有卫生许可证,从业人员健康证持证率为97.01%,餐具消毒合格率96.67%。小型饭馆合格率最低,为93.07%;学校食堂合格率最高,为100%。各类餐饮业餐具消毒合格率不同,差异有统计学意义(χ2=60.10,P<0.01)。结论应加强对经营者的卫生知识培训,加大监管部门对餐具消毒的监督力度,提高餐具的消毒合格率。[Objective]To understand the sanitary and disinfection status in Daxing catering industry,and provide evidence for strengthening supervision. [Methods]During January-July in 2010,100 catering units of small and medium size and corporation eatery were randomly selected as study objects for tableware sanitary test.The results were analyzed according to "Disinfection Hygiene Standards for Tableware"(GB 14934-94) [Results]All catering units had sanitation license,the holding rate of health certificate was 97.01% among employees,the qualified rate of tableware disinfection was 96.67%.The qualified rate was lowest in catering units of small size(93.07%) and highest in school canteen(100%).The difference of tableware disinfection quality was significantly different between different catering units(χ2=60.10,P0.01). [Conclusion]It is necessary to strengthen the training of operators about health knowledge,to increase the intensity of regulatory towards disinfection,and improve the qualified rate of tableware disinfection.
