摘　　要：六堡茶是广西具有悠久历史的特有黑茶,历年来制作六堡茶的主要原材料相比无性系缺陷大。采用广西桂林茶叶科学研究所自主知识产权桂红3号、桂红4号、桂绿1号3个无性系国家级红、绿茶品种为材料,以氧化基质丰富的云南大叶种做对照,进行发酵六堡茶研究,并对发酵过程中主要生化成分和色素成分进行分析,探讨了这几个新品种进行人工后发酵生化成分和色素成分的变化规律,为开发适制六堡茶的无性系茶树品种提供依据。Liu Pao tea is the unique black tea with a long history in Guangxi,the main raw material of Liu Pao tea has some defects.In this study,the materials were three proprietary national red,green variety clones,such as Guihong No.3,Guihong No.4,Guilv No.1,and Yunnan big leaf species as CK.We analyzed the main biochemical compents and pigment composition of the fermention process in order to explore their changing patterns,which can provide a basis of the development clonal tea varieties of suitable for Liu Pao tea.
