摘 要:目的了解北京市延庆县食源性致病菌污染状况及污染途径,初步确定高危食品的种类,为食源性疾病的监测提供科学的依据。方法 2009~2010年抽取延庆县8类食品样品,进行沙门氏菌、单核细胞增生李斯特氏菌、金黄色葡萄球菌、肠出血性大肠埃希氏菌O157:H7、副溶血性弧菌检测。结果 250件食品样品,共检出致病菌21株(8.4%),其中单核细胞增生李斯特氏菌11株(5.8%),金黄色葡萄球菌5株(2.4%),副溶血性弧菌5株(6.7%)。结论延庆县某些食品存在食源性致病菌的污染,应采取有效的控制措施,加强食品卫生监督管理,减少食源性疾患发生。Objective In order to understand the status and means of the contamination caused by food-borne pathogens in Yanqing County, Beijing, a study was conducted to determine the type of high-risk foods and provide a scientific evidence for the surveillance of food-borne disease. Methods 8 kind of food samples were selected to detect several pathogens, such as Salmonella, Listeria monocytogenes bacteria, Staphylococcus aureus, enterohemorrhagic Escherichia coli O157:H7 and Vibrio parahaemolytieus. Results There were 21 strains of pathogens ( accounting for 8.4% ) were found among 250 samples including 11 strains of Listeria monocytogenes bacteria (accounting for 5.8% ), 5 strains of Staphylococcus aureus (accounting for 2.4% ) ,and 5 strains of Vibrio parahaemolyticus (accounting for 6. 7% ). Conclusion According to the contamination caused by the food-borne pathogens in some foods in Yanqing County, the effective control measures should be taken to strengthen food safety supervision and management in order to reduce the risk of diseases.
