摘 要:采用FA、FB、FC 3种施肥方式及空白对照FD,研究福鼎大白茶(Camellia sinensis cv.Fuding-dabaicha)在不同施肥方式下的生化成分及花香绿茶品质变化特征。结果表明:各处理鲜叶氨基酸总量顺序为FB>FA>FC>FD,分别比对照增加了21%、18%、14%;茶氨酸总量顺序为FB>FC>FA>FD,分别比对照增加了12%、6%、3%;感官审评总分顺序为FB>FA>FC>FD,分别比对照增加了1.9、1.6、0.6分;花香绿茶主要香气成分相对含量总量顺序为FB>FA>FD>FC,FB、FA分别比对照增加了8.58、2.99个百分点。3种施肥方式中,FB最有利于转化和积累茶叶氨基酸、香气物质等生化成分,提高绿茶的花香品质。In order to investigate change characters of biochemical components and quality of fragrant green tea from Camellia sinensis cv﹒Fuding-dabaicha under different fertilization treatments,three fertilization treatments(named FA,FB,FC,respectively) and a control(FD) were carried out in the current work.The results showed that the total contents of amino acids in fragrant green was FB FA FCFD,and their contents in FB,FA,FC were increased by 21%,18%,14%,respectively,compared with FD.In comparison with the control,the total contents of theanine in FB,FA and FC were enhanced by 12%,6% and 3%,respectively;and their sensory evaluation for total score were elevated by 1.9,1.6 and 0.6,respectively.The contents of main aroma components were FB FA FD FC,and compared with FD,contents in FB and FA were 8.58% and 2.99% higher,respectively.Therefore,among the tested treatments,FB demonstrated the best effect on promoting the accumulation and transformation of amino acids,aroma and other biochemical components,consequently improved the quality of green tea flowers.
