摘　　要：综述了糖玻璃胶囊化、超微胶囊化、改性β－环状糊精包埋、脂质体对酶的胶囊化新技术；介绍了香气释放的机理；the thesis dwells on the newest technology of sugar-glass encapsulation, super-microcapsu1ation, encap- sulation of modified β-cyclodextrin, encapsulation of enzymes in liposome, and introduces the mechanism of the delivery of aroma. It also predicts the prospect of microencapsulation technology。
