摘  要:目的了解江西省食品中食源性沙门菌污染情况。方法应用GB4789.4-2010的方法检测13类3437份食品,并对分离的沙门菌进行血清型鉴定试验。结果3437份食品中检出沙门菌污染155份,沙门菌检出率为4.51%。其中生禽肉、生畜肉、中式凉拌菜、熟肉制品的沙门菌检出率分别为27.4%、13.7%、2.52%、1.46%,婴幼儿配方食品、速冻米面制品等食品中未检出。血清学鉴定分属8个血清群或亚群、21个血清型。结论生禽肉、生畜肉是食源性沙门菌污染的主要食品,中式凉拌菜和熟肉制品也遭受了沙门菌的污染,这些食品存在食物中毒隐患,应引起足够重视。江西省食品中沙门菌血清型分布呈多态性,优势血清型主要是德尔卑(47.13%)。Objective To investigate the contamination status of food by Salmonella in Jiangxi Province.Methods Detection of Salmonella in 3437 samples was performed with the method of GB4789.4-2010,serotypes of 155 strains were identified by using serotype identification test.Results Among the 3437 samples from 13 kinds of food examined,155 of them were detected to have Salmonella contamination and the detection rate was 4.51%.The detection rates of Salmonella in poultry,livestock,cold dishes and cooked meat were 27.4%,13.7%,2.52%,1.46% respectively,it was not detected in infant formula foods and quick-frozen wheaten food.The Salmonella detected from the food samples belong to 8 serogroups or subgroups,21 serotypes by serotype identification.Conclusion The poultry and livestock are the main foods contaminated by Salmonella.The serotype distribution of foodborne Salmonella within Jaingxi Province shows polymorphism and the dominant serotype is S.derby(47.13%).
