摘  要:应用气相色谱内标法测定了50多种植物油、20多种地沟油和4种动物油中37种脂肪酸的含量,对其脂肪酸组成和差异进行了分析,建立了不同种类植物油脂的特征指纹谱库。应用该指纹谱库可以对各品种植物油进行种类归属判定;同时分析了地沟油与植物油的差异性脂肪酸组成,发现特定的脂肪酸如月桂酸(C12:0)、肉豆蔻酸(C14:0)和十七烷酸(C17:0)等的含量组成,地沟油与正常油脂具有明显的差异,可以作为地沟油的判别依据;利用该判别依据,参加了两次卫生部组织的地沟油盲样考核,阳性准确率均在90%以上。表明利用脂肪酸组成分析方法,是一种有效且可靠性较高的鉴别地沟油的方法。A gas chromatography method was applied to analyze the contents of 37 fatty acids in more than 50 vegetable oils,25 hogwash oils and 4 animal oils respectively.The compositions and differences were analyzed and a characteristic fingerprint library was established for different types of vegetable oils.The type of unknown oil can be distinguished using the established fingerprint library.Moreover,the differences between hogwash oils and vegetable oils were analyzed,the content of specific fatty acids such as lauric acid(C12:0),myristate acid(C14:0) and heptadecanoic acid(C17:0) has a significant differences between hogwash oils and vegetable oils.The differences were applied to distinguish hogwash oils from good vegetable oils in 2 blind assessment tests.The both tests were of more than 90% accuracy and it is showed that this method can be applied to differentiate hogwash oils from good vegetable oils.
