摘　　要：胡萝卜富含活性物质,如类胡萝卜素和膳食纤维,广泛应用于药物和食品工业。本文分析了国内外胡萝卜产品的现状及存在问题,提出采用现代技术及工艺,开发新型保健性胡萝卜产品,开辟新研究方向。There are rich active substances in carrots,such as carotenoids and dietary fiber,which were widely used in pharmaceutical and food industries. The text analyses the status and problem of the domestic and foreign carrot product,it proposes the using of modern technology and craft. Developing new health-carrot products and opening new research directions.
