摘　　要：从纯种种源扩大培养,老窖泥富集培养、窖泥踩制、窖池建造以及装窖酿酒等角度,阐述了切实可行的人工窖泥培养方法和新装窖的生产措施。按照方法设计操作,装窖首轮生产即可产出优质曲酒。In this paper,the feasible culture methods of manmade pit mud and new pit loading measures were illustrated from the angle of expand culture of pure species,enrichment culture of aged pit mud,pit mud stamping,pit construction,and pit loading etc.If operated according to the above measures,quality liquor could be produced in the first production turn.（Tran.by YUE Yang）
