摘　　要：介绍了光谱、色谱等分析法中几种现代仪器分析技术的基本原理及其在黄酒分析研究中的应用,总结了目前黄酒研究中常用的分析方法。In this paper,the basic principles of several modern instrument analysis techniques and their application in the research on yellow rice wine were introduced from the aspects including spectrum,chromatography and so on.In addition,the commonly-used analysis techniques in yellow rice wine research at present were summed up.
