摘　　要：以冷冻面包虾产品为研究对象,基于HACCP原则分析了面包虾加工过程中各环节的关键控制点及相应质量控制内容,并对追溯模式策略进行选择,在此基础上提出了质量追溯系统的总体设计方案。采用B/S结构,利用Visual Studio面向对象的集成开发环境和SQL Server 2008关系数据库技术,实现了基于.net架构的质量追溯系统。With the freezing breaded shrimp products as the research object, the critical hazard points and quality control contents of bread shrimp processing were analyzed based on HACCP principle and the strategies of traceability model was selected, the overall design scheme of the quality traceability system was proposed on this basis. The quality traceability system based on the .net framework was developed by using the B/S structure, Visual Studio object-oriented integrated development environment and SQL Server 2008relationg database tehnolgy.
