摘 要:本文是J Oliveira等发表于Food Control2011年第22期第805~816页"Microbial contamination and purification ofbivalve shellfish:Crucial aspects in monitoring and future perspectives e A mini-review"一文的译文。原作者为阿威罗大学大气与海洋研究中心生物系教授,主要从事贝类微生物学研究。文中指出:贝类营养丰富,世界范围内,其消费量及市场价格同步增长。尽管食用双壳贝类可促进饮食健康,但也会引发食源性疾病。在双壳贝类的收获地,微生物污染长期普遍存在并可能传播给消费者。现行食品安全计划欲保护消费者,然而,对双壳贝类微生物污染的轻视及管理欠缺可能会给公共卫生带来潜在风险。本文旨在提供关于双壳贝类的微生物评估及消除微生物污染的新兴替代性或补充性观点的最新概况。对于提高贝类的安全性、加强公共卫生控制则需要进一步研究。This article is a translation from the original “Microbial contamination and purification of bivalve shellfish: Crucial aspects in monitoring and future perspectives - A mini -review” published on “Food Control” 22(2011 ) 805 - 816 wrote by J. Oliveira etc. The writer indicated in the article that shellfish are a nutritious food source whose consumption and commercial value has risen dramatically worldwide. Although bivalve' s consumption can contribute to a healthy diet, some can cause foodborne illnesses. Microbial contamination is chronic and pervasive in protect consumers. Nevertheless, bivalve' s microbial contamination is underestimated and undermanagem which can pose a potential public health risk. We intend to provide an updated overview of the microbial assessment of bivalves and emerging alternatives or complementary perspectives for the elimination of microbial contamination.
